Flour Tortillas

in a large bowl, add
3 1/2 cups (420 grams) AP flour
1 1/2 tsp baking powder
2 tsp salt
whisk everything together
mix in with fork while pouring:
1/2 cup (113 grams) melted butter (or lard)
with hands, mix large bits down into smaller sandy type texture
1 1/4 cup hot water - add to bowl little by little, might not need all of it. should come together in a shaggy dough
lightly flour countertop and hands. knead dough until smooth and bounces back when poked
divide into 4, then each piece into 4 again (16 total pieces)
using palm of one hand and fingers of other hand, roll into smooth balls
group all doughballs together and cover with lightly damp kitchen towel
let rest about 20 min at least
heat medium size pan on medium
squish dough ball down a little and put in press between parchment paper or baggie
if press doesn't make them thin enough, transfer to counter and roll thinner
cook 30 sec to 1 min on each side
