Chocolate Chip Cookies

2 Cups + 2 Tbsp Flour
1 Tsp Baking Soda
2 Tsp Corn Starch
1 Tsp Salt
1 1/2 sticks (6 oz) butter, melted and cooled
1 cup dark brown sugar, lightly packed
1/2 cup white sugar
2 large eggs
2 Tsp vanilla extract
1 1/2 cups chocolate chips (+ extra for topping)
Preheat over to 350 F
In a medium bowl, whisk up all the dry stuff
In a big ol bowl, cream together the butter and sugars. THEN, add eggs and vanilla.
slowly add dry mix, then fold in chocolate chips.
bake for 8-11 min, roughly (based on oven - do 2 test cookies until perfect)
add extra chips on top, cause its awesome

For the Syrup (that goes into the dough)
1/2 cup piloncillo, crushed, or brown sugar
1/2 cup water
For the filling:
1/2 cup piloncillo (crushed)
1 Tbsp all purpose flour
For the dough
3 & 1/3 cups all purpose flour
1 & 1/4 cup lard or vegetable shortening
1/2 Tbsp baking powderpinch of salt
Prep syrup-
Put piloncillo and water in saucepan over low heat. Stir until dissolved completely. Remove from heat and allow to cool.
Prep filling-
Crush the piloncillo (making 1/2 cup after it’s crushed). Add tbsp of flour and mix well.
Make dough (by hand)-
In a large bowl, place the flour, baking powder and a pinch of salt. Whisk together. Add in the piloncillo syrup and fat (veggie shortening or lard) Knead in the fat until mostly combined Transfer to working surface and knead for about 10 min, until smooth dough is achieved that easily releases from your hands. (If the dough is too dry, add one to two tablespoon of cold water)
Make dough (mixer)-
Add flour, fat, baking powder, salt, and syrup into bowl. Mix that stuff together until smooth (about 2 min). Transfer to work surface and knead until smooth (about 1 min). (If the dough is too dry, add one to two tablespoon of cold water)
Assembly
(Recipe says to flour work surface, but I just used parchment paper and kept dough cool) Roll out dough about 3 mm thick Cut out rounds about 4” (10 cm) Put roughly 1 tsp of filling (enough to cover the center, leaving bare edges) Cover one half with another dough round Using a fork, lightly press “fork marks” (?) into edges (sorry, idk what they’re called) Poke a set of fork holes into the top, center Place onto parchment paper, on baking tray.
Bake!!!
bake at 360F (180C) for ~20 min, until lightly brown on top and slightly darker on the edges. Once removed from oven, I sprinkle a castor sugar & cinnamon mix on top before serving. Enjoy!
